THE LOST RECIPE.
HAALITTU PAAYASA
This sweet dish comes from the south canara district of
Karnataka. It is served as an offering to the goddess during Gowri Puja in the
Haviyak Community and it is very popular among Kodagu Haviyaks.
This dish has the typical flavors of fresh coconut milk,
rice, jaggery and green cardamom. The methods of cooking used here is boiling
and sometimes the rice noodles and balls are also steamed before adding them to
the coconut milk.
INGREDIENTS:
Coconut milk, raw rice, jaggery and green cardamom.
PROCEDURE:
Soak raw rice for an hour. Grind and make a
paste, it should have the consistency of dosa batter.
Cook the batter in a kadhai, with a tablespoon
of butter (optional) and a pinch of salt.
Extract thick coconut milk, both thick and thin.
Add jaggery to the thin coconut milk and boil.
Take the cooked rice batter and make balls and
thick noodles out of them using a Chakkuli Muttu with a round stencil.
Add the rice balls and noodles to the boiling
coconut milk. Let it cook for about 20 minutes.
Then add cardamom powder and the thick coconut
milk and stir it. Turn off the flame.
Serve hot.
There’s nothing peculiar about the dish, but it’s difficult
to prepare because the consistency of the rice batter should be perfect as it
can get dissolved in the coconut milk while boiling.
The utensils used for preparing this sweet dish is a kadhai,
handi, chakkuli muttu.
